Sweet Potato Soup with Ginger Brown Sugar

  • Sweet Potato/ Purple Sweet Potato (Peeled, Cut into chunks, Soaked)
2 pcs (300g)
  • Old Ginger (Peeled, Sliced)
5 slices (11g)
  • Ginger Brown Sugar
3-4 pcs (100g)
  • Water

Steps

1. Bring 1L water to a boil, then slightly bruise ginger (smash with flat side of knife) and boil it over medium heat for 10 minutes until aromatic.

 

2. Add sweet potato and boil over medium heat with a lid for 20 minutes until sweet potato softened.

 

3. Stir in ginger brown sugar and cook until melted. Enjoy!
