Vegan Shepherd’s Pie

Ingredients (2 servings)
  • OmniPork
1 pack
  • Onion, diced

  • Mixed veggies
60g
  • Vegetable stock

80ml

  • Tomato sauce

4tbsps

  • Salt

⅓tsp

  • Crushed black pepper

½tsp

  • Fresh/dried thyme

½tsp

Pie crust
  • Potatoes

  • Vegan butter

20g

  • Plant milk
30ml
  • Salt

Steps

1. Preheat the oven to 200 degrees.

 

2. Peel and dice the potatoes. Place the potatoes in a large pot filled with water, and bring to a low boil on medium high heat. Cook for 15 minutes until the potatoes are cooked through.

 

3.Drain the potatoes and mash until smooth. Add vegan butter, plant milk, and season with salt to taste. Loosely cover and set aside.

 

4.Over medium heat, sauté onion until softened. Add OmniPork, mixed veggies, tomato sauce, vegetable stock, salt, black pepper, thyme, and mix well. Cook until the mixture thickens, transfer to a baking dish and topped with mashed potatoes.

 

5.Bake for 25 to 30 minutes at 200 degrees.

 

Cooking tips: 

  1. Tomato sauce can be replaced by tomato paste by using ½ the measurement.

  2. To decorate the pie, feel free to use a nozzle tip to pipe the mashed potatoes, or use a fork to create peaks on the surface.
