Moving Mountains Pita Burger And Salsa

  • Cherry Tomatoes (deseeded and chopped)

  • Spring Onion (trimmed, finely sliced)

  • Lime (zested, juiced)

  • Plant-based Mayo

  • Sriracha Sauce/Chilli Sauce

Steps

1. Salsa and Chilli Mayo: In a small bowl, mix cherry tomatoes, spring onion, lime juice and zest, then season with salt and pepper. In another bowl, mix all ingredients well.

 

2. Heat a griddle pan over medium heat. Drizzle the corn with rapeseed oil and sprinkle with salt and pepper, then cook for about 10 minutes, turn it every 2 minutes.

 

3. Meanwhile, drizzle more oil over the griddle and grill burger patties on each side for 5 minutes, set aside.

 

4. Grill halloumi slices for 1 minute on each side, then take the halloumi and corn off the griddle. Remove corn kernel from cob and stir well with tomato salsa.

 

5. Toast and cut open the pita breads and spread the mayo inside, then fill with salsa, burger patty, halloumi and coriander.
